They have a 100% lard fat fryer. Will cook your food in olive oil or butter upon request. They have a binder that lists all of their ingredients so the staff is highly aware, and are able to guide you through what you can and cannot have. A very accommodating restaurant that will take it seriously if you let them know ahead of time.
