They only use Olive Oil in all dishes, and the traditional style pizzas are made from imported Italian pizza flour, not American wheat. All other ingredients are fresh.

I have separately asked each cashier during each of my 4 visits. They only use lard to fry and cook, including their tortilla chips. They are proud to use lard and maintain this traditional way of doing Mexican food. They don't even keep any other oils on site.

They have a 100% lard fat fryer. Will cook your food in olive oil or butter upon request. They have a binder that lists all of their ingredients so the staff is highly aware, and are able to guide you through what you can and cannot have. A very accommodating restaurant that will take it seriously if you let them know ahead of time.

Server noted all vegetables are cooked in an olive oil blend, the blend is used for all dishes except the fried foods. You could get an avocado or salad (no dressing) without seed oil.
