They admitted that they cook all of their steaks in a mix of butter and canola oil. I asked if mine could only be cooked in butter. I was told: "Sure. I can put a note and let the chef know." Tasted good overall!

I love this restaurant, and won't stop going, but I am sad to report that they very much DO use CANOLA oil to fry all things fried. That's the whole story, sorry!

Palm oil is used in the fryer, and extra virgin olive oil everywhere else. Restaurant advertises as "100% free of gluten, dairy, soy, peanuts, refined sugar & seed oils" on its website.

The fryer is beef fat but "canola or vegetable oil" is used on the griddle.

Dishes are cooked using "Texas olive oil" predominately, plus animal fats from hogs, beef, chicken, duck, and butter. The deep fryer uses non-GMO expeller pressed canola oil. Many of the ingredients are organic and local, see https://www.daidue.com/home for details.
